At this step you want to download the latest version of Exchange 2013 (each CU is a complete build) and use that to download the copy of Exchange to the server.

I am a bit leary of doing such a thing.
We know from experience that Exchange 2013 RTM installs and configures the same way every time.
What we don’t know is whether whatever was intruduced with each new build will be happy at the end of the installer routine.
As a precaution we prefer to install RTM, run our configuration steps, and then update to the latest.
Certainly there is a bit of extra time involved, but at least we are assured of the same result every time.
From there, as one has time, one can run install tests with the latest CU to verify its behaviour.

Keep in mind the instructions specifically state I need to install CU2 in order to connect with Exchange 2007. I can’t install RTM and stay on that code too long.
